Pasteurised Egg White

Farm Pride Fresh Pasteurised Egg White is separated albumen from fresh hen eggs, pasteurised and packed. It does not contain added salt, preservatives, additives, colours or flavours.

Applications:

  • Pasteurised egg white (also known as egg albumen) is used in all recipes requiring egg white for its aerating, whipping and foaming properties. Ideal for use in pavlovas, meringues, confectionery and nougats. Farm Pride Pasteurised Egg White is also an excellent binding agent, suitable for use in small goods and fish products. It can be used as a glaze for pastry and biscuits.

Storage and shelf life:

  • Chilled Liquid: 1°C to 4°C, shelf life 10 days from date of dispatch
  • Frozen:  -18°C and has a shelf life of two years from the date of manufacture.

Pasteurised egg white mix

Farm Pride Pasteurised Egg White Mix contains fresh egg white (egg albumen), vegetable gum and a whipping aid.

Applications:

  • Ideal for use in aerated products and used by manufacturers of pavlovas, meringues, macaroons, soft sponges, nougats, confectionery, souffles, sweet and savoury mousse, glazed cakes and pastries. It can also be used as a binder in small goods.

Storage and shelf life:

  • Chilled Liquid: 1°C to 4°C. 10 days from date of dispatch
  • Frozen:  -18°C and has a shelf life of two years from the date of manufacture.

Pack sizes:

  • Chilled Liquid: 10kg bag in box, 850kg pallecon
  • Frozen: 10 kg bag in box.

Egg white powder – high whip

Farm Pride High Whip Egg White Powder is prepared from fresh egg whites (egg albumen) which are spray dried and pasteurised. The powder is high in protein and free from odours and foreign matter.

Applications:

  • For uses were egg albumen (whites) and its whipping, binding and coagulating properties are required. The product is typically used in pavlovas, meringues, confectionery, nougats and other aerated products. It can be used in glazed pastries, dry packet mixes or as a binder in small goods.

Storage and shelf life:

  • 8°C to 15°C in a sealed container, two years from date of manufacture.

Pack sizes:

  • 15kg bag (Australian, subject to availability) and 20kg bag (imported).

Egg white powder – low whip

Farm Pride Low Whip Egg White Powder is prepared from fresh egg whites (egg albumen) then spray dried and pasteurised. The powder is high in protein and free from odours and foreign matter.

Applications:

  • It is for use in many foods where egg white and its binding and coagulating properties are ideal. Commonly used in pasta, batter, small goods, drink mixes, icing and glazed pastries, cake mixes and processed fish products and confectionery.

Storage and shelf life:

  • 8°C to 15°C in a sealed container, two years from date of manufacture.

Pack sizes:

  • 15kg bag (Australian, subject to availability) and 20kg bag (imported).
  • 1kg bag to pack sizes of low whip.
