Pierrick Boyer – Lemon Curd
- 50g raw sugar
- 1 lemon zested
- 100ml lemon juice
- 100g egg yolks
- 150g butter
- Rinse the lemon and zest over the butter.
- Whisk together the sugar and egg yolk.
- Bring the lemon juice to a boil. Then add sugar and egg yolk mix. Bring to the boil, whisking constantly.
- Pour over the butter and zest. Whisk all the ingredients well and cool down before use.
