Pierrick Boyer’s Lemon Curd


  • 50g raw sugar
  • 1 lemon zested
  • 100ml lemon juice
  • 100g egg yolks
  • 150g butter



  1. Rinse the lemon and zest over the butter.
  2. Whisk together the sugar and egg yolk.
  3. Bring the lemon juice to a boil. Then add sugar and egg yolk mix. Bring to the boil, whisking constantly.
  4. Pour over the butter and zest. Whisk all the ingredients well and cool down before use.
