Baked Eggs


  • 4 Farm Pride eggs
  • Olive oil
  • 1 onion diced
  • 1 clove of crushed garlic
  • 1 large can of chopped tomatoes
  • 1 tsp smoked paprika
  • 4-6 slices of chorizo
  • seasonal fresh herbs
  • bread, to serve



  1. Heat the olive oil in a large frying pan and add onion and garlic. Saute until the onion is translucent.
  2. Add the chopped tomatoes, half of the chopped herbs, smoked paprika and mix to combine.
  3. Add the chorizo and mix into the sauce.
  4. Carefully break the eggs into wells made in the sauce.
  5. Cook until the eggs whites are set and the yolks are as you like them. If you are using an oven safe frying pan, this can be finished in the oven.
  6. Serve topped with the remaining chopped herbs and bread.
