Matt Wilkinson’s Cheats Hollandaise


  • 3 Farm Pride eggs, boiled for 3 1/2 minutes, peeled
  • 1 tsp Dijon mustard
  • 2 tbsp chardonnay vinegar
  • 250g unsalted butter, melted
  • Salt and pepper



  1. Place eggs, mustard and vinegar into a stick blender jug, using the stick blender blitz together until smooth then slowly add all the butter to make a smooth hollandaise consistency.

    Note the eggs have to peeled while hot and blitzed while hot, or the mixture will not emulsify.
